Hi Stefano,
adding a bit more to what Simone said, I would also suggest to review the
JVM OPTS parameters, and in particular the available heap memory and the
configuration of the garbage collector. Other than this it is worth looking
also to the GeoServer JAI and WCS configurations.

In order to troubleshoot the issue, also, it could be worth trying to
connect a vanilla GeoServer (same version of course) without additional
plugins to the same GEOSERVER_DATA_DIR (better to do a backup first) and
see if the problem occurs again.

Nevertheless I'm still convinced that some client app is making requests
repeatedly to your GeoServer instance, somehow. In that case the only way
to reduce the resource consumption would be to configure the services
limits or, in the worst case, to disable to raw services at all.
