You can get the sources using mercurial (similar to svn or git) with
:
hg clone http://hg.geotoolkit.org/geotoolkit-pending/ geotk-pending

after a few minutes you will have a geotk-pending folder with all
the source code and demos.

If you don't have mercurial you can download it here :
http://mercurial.selenic.com/

Or you can explore the code source directly on your web browser here
:
http://hg.geotoolkit.org/geotoolkit-pending/file/f1529d838035/demos/geotk-demo-samples/src/main/java/org/geotoolkit/pending/demo

If you want the latest compiled jar files, they are available here :

Sure, you have plenty of solutions to achieve it.

I suggest you explore the demo module in geotookit-pending
:
/demos/geotk-demo-samples/src/main/java/org/geotoolkit/pending/demo

The usual way to render a map is to build a MapContext and
MapLayers defining sources and styles.
(check demos in folder /mapmodel and /symbology)

Or you can directly plug-in the rendering engine to paint
whatever you want.
(check demos in folder /rendering)
