Hi Stefan,
you can use r3.cross.rast available at
http://www-pool.math.tu-berlin.de/~soeren/grass/modules/
to create cut planes. In the description is a small
example how to create a plane and how to cut 
the 3d volume.

If you want to visualize cut planes, try out the r3.out.vtk module in
combination with Paraview (www.paraview.org). The module r3.out.vtk
and some other programms for volumen processing are also available
at
http://www-pool.math.tu-berlin.de/~soeren/grass/modules/

Some of these Modules are already in gass-6.1-cvs.(r3.cross.rast is not in
cvs yet) 
If you are using a different
version of GRASS, you have to compile those modules at your own risk ;). I
didnt tested them
with older GRASS versions then 6.1. 


The modules at my hompeage are still in development and have beta status,
so if you want to use them, you will become an official betatester :).
