Dear Monkey,
You have several questions on your email.
Regarding you adjust your bounding box, try something like

g.region vect=mymap

If your shapefile have an attribute with the elevation, probably when you
imported your map one collum is the elevation. Try

v.db.select map=mymap


Yes, you can build your elevation profile from vector map.
