So you could take a VM already created, change it as you see fit, then
create an ISO.

Only one, if you want the mini do ./build_iso.sh mini etc.
It will take that flag and not include win/mac installers which makes it
fit on a 4GB usb.
You can remaster an existing iso the data will just sit outside the
normal filesystem, but I believe be usable as a cdrom while running Live.
So grabbing the VM, adding data and running the build script is the
recommended way.
