Since no one said anything.  Let me make it clear

1) I like versionning the folder

BUT
2) I HATE the idea of versioning the sql files, because we have too many and
with the proliferation of upgrade script files, the situation only gets
worse and annoying.

Having to see all the files in the same folder regardless of how they are
versioned for the different versions of postgis I would find terribly
annoying. 

I think its an advantage to be able to run different versions of PostGIS on
the same box especially if you are a consultant or doing dev work, but I
just don't like seeing all those files in the same folder

To add I think we have enough uninstall ..sql this and that that having to
label each accordingly would be a pain, and when you want to install -- just
delete the whole folder

So the way the windows install current structure is

contrib/postgis (to store the shared proj etc.)
contrib/postgis-1.4
contrib/postgis-1.5

I actually wanted to do the same thing with the template_postgis (so as not
to overwrite  for people who one to run separate versions on the same
postgresql service)

I personally like the idea of numbering the whole contrib/postgis-1.5

That is what I have done with the Windows installs.  Its easier to manage I
think, because each version is in its own folder so you don't have to guess
what goes with what.  Like naming uninstall etc. and changing the script
each version
