I'd suggest to build, install and play with WKT Raster.
Then go to the roadmap on the Wiki and see if there is anything
that would be of your interest. If you'd like to work on any of 
TODO items, please notify the postgis-devel list, so Pierre
can update the roadmap and others know about it too.
