<p>Indeed - removing the file "qgis_customwidgets.py" from /usr/lib/python3/dist-packages/PyQt5/uic/widget-plugins brought the Processing modeler back to normal!</p>
<p>Cool!</p>
<p>So now we at least do know that this is the culprit.</p>
