Hi, 

there is a new GRASS wiki site about GRASS and Free GIS education. It
could and probably will also cover QGIS related topics. Anyway I think it might
make more sense to add such a site to wiki.qgis.org as well and link it:

another possibility can be the OSGeo.org Education Committee Work Program:
