You can do this with the field calculator in version 1.4.0 or newer. Open the attribute table, make the layer editable, click the little calculator icon and select the field you want to update. Then put the value in the bottom portion that you want to populate your rows with. You can also act on selections rather than all records. If you want to enter text into a text field, you need to quote the text, I believe.
