Do you really need help _using_ the expression based labelling, or are you simply unable to find it?
It was only merged into QGIS trunk a couple of days ago, so it won't be available unless you have that.

Did you click on the help button in the field calculator?  Most things should be fairly straightforward, but you might need to read up on regular expressions to use regexp_replace()
