Hi Dimitris,
Yes as Alex mentioned, we are in the initial stages of working on the 3rd
Edition of Mastering QGIS. We hope to have it done around the release of
3.2.

Another great option for the classroom is Discover QGIS
https://locatepress.com/dqw  <https://locatepress.com/dqw> which is an
updated version of the GeoAcademy curriculum. It was written specifically
for the classroom. It is a workbook with lab exercises, data, discussion
questions and solution files. It teaches GIS using QGIS as opposed to just
teaching how to use QGIS. It too will need to be updated to v3 but most of
it should still be relevant.

AFAIK, a revision is on its way to QGIS 3.
