Just tried a few datasets in 3d faces and they triangulate beautifully in 3.16.  For some reason need to import from dwg instead of dxf, or re-export to gpkg before the tool will let me use the intrinsic z data, but really works very nicely.

Hi Mike:

I usually convert the contours or breaklines into a point layer and then generate a dem from that.  This is not a precise methodology but it would depend on what you are trying to do and the precision of the underlying data.
