Hello Angelos,
nice to hear that you use ZOO Kernel.

I never used WCS server with ZOO but you should be able to use WCS Request as input for a ZOO Process. You would use a Reference for this input and set the xlink:href value as the url encoded version of your WCS Request. Something similar to the following, added in your GET Request DataInputs value should do the trick (note that you can also use the XML POST request which should be easier) :

<InputName>=Reference at xlink:href=<YouUrlEncodedRequest>

Then in your ZOO Process you should get the string containing the WCS Response  in the "value" field of your input and can use it to feed your gdal processing.
