Luckily I found the e-mail where I had summarized this previously for the FOSS4G2006 folks.
I include it below. This is for MUM3; what went on at MUM1 isn't really relevant and not
easily obtained. DM results for MUM2 would be more relevant.
Good luck with the sort of conference that's being anticipated in 2007.

I see by the notes that you will be asking me for budget
information. I can give you an overview from the 2005 meeting.
Many expenses came in after the meeting and I didn't keep the
best track once I saw that we weren't going to lose money. We are
still "owed" money as well.
I can tell you that I was worried for some time about whether
this was going to work or not. The hotel made us commit to more
than I was comfortable with. Everyone kept telling me we'd have
high participation (which in the end we did), but it was my neck
that was sticking out. The university has no contingency funds
for things like this. I started with $0.
The generosity of the sponsors allowed us to have the sort of
meeting we wanted to have (without charging fees that would have
kept some away).
Here's what it looked like (US$):
Income from participants $57000

Expenses $77500
The major expense categories that will relate to what you will
deal with were:
Food $38000
Other hotel charges $2500
Meeting materials (for participants) $9000
t-shirt, etc.
copying (includes workshops)
Speaker gifts and door prizes $2000
Keynote expenses $1500
Registration costs (incl. credit card) $3000
Staffing (before and during) $9000
Taxes and indirect costs (University) $11000
Misc $1500
