Hei Chris and Raj,
OpenJUMPs WFS plugin works for newer WFS versions only against deegree,
I think.
and yes deegree is a complete stack as you will see from the wiki
the UI you mentioned is called iGeoDesktop (they work on it now for a
while - used mainly for their customers so far, I think):
