Jan,
There has been some initial work on an extension done, in VB, by one 
group.  It has been updated by a few others, but provides a decent ability 
to extract data from PostGIS into an ArcMap layer and stores enough 
metadata to allow you to edit the file and post it back into PostGIS, 
replacing the table with the updated info. 

This project is called PgArc - located at: 
http://sourceforge.net/projects/pgarc/ or http://pgarc.sourceforge.net/
I can add you to the developers list if you want to continue discussions 
there.

A side group has been working on developing a PostgreSQL ole db connector 
which can serve as a basis for read and write connectivity directly with 
the database using, from what I understand, a more standard ArcMap 
component. 

The website for this project appears to be down, but you can find it on: 
http://gborg.postgresql.org/

I highly recommend building on this previous work or at least building on 
the Ole db connector work, rather than using ODBC.  If interested, this is 
worthy of more discussion on the pgarc mailing list or one that you may 
have for your project.  I am interested in helping coordinate bringing the 
two projects together.  Feel free to also contact my off list to discuss.
