Do you mean variables related to GDAL or platform (architecture, CPU,
system) ?

All variables, macros, etc. are defined in property sheet
wince/msvc80/gdalce_common.vsprops
and project file
wince/msvc80/gdalce_dll/gdalce_dll.vsproj
