You can use -oo REMOVE_UNUSED_LAYERS=YES (and -oo REMOVE_UNUSED_FIELDS=YES) to 
get only the relevant layers for what is really in the .xml

Thanks. A big remaining part planned for the next weeks is doing the reverse 
operation: given a database with a structure of layers and fields as the ones 
exposed by the read side, compose a valid XML file.
