   Have a look at the mapserver section of the mapbook doc:

http://docs.geomoose.org/2.7/docs/mapbook.html

1. Add a map-source with a <file> tag referencing your map file
2. Add a layer in the <catalog> section of the mapbook referencing your 
new map-source entry
