  docker: update simple.laz (#2841)

* update simple.laz to LAZ > 1.0:
    * reformatted with `las2las -i simple.laz -o simple_new.laz ; mv simple_new.laz simple.laz` to avoid PDAL/laz-perf error in LAZ chunk table
