* Refactor Docker workflow to use matrix strategy

* Remove occurrences of matrix.os

* Fix syntax for accessing matrix build outputs

* Fix syntax for accessing matrix build outputs

* Refactor Docker workflow to use matrix.name

* Delete docker/ubuntu_wxgui directory

* Always use build-args

* Apply suggestions from code review
