Geostatistics is done on GRASS in conjunction with R and it's geostatistical packages, which you can find here:

R is found here: http://www.r-project.org/

Also, a standalone package (found in R) gstat can be found here: http://gstat.org/

You may also want to look here http://casoilresource.lawr.ucdavis.edu/drupal/node/438 for some applications
