There is a tutorial on the GRASS ftp site for GRASS 4.0
which is still mostly applicable:

    This is a tutorial for users of GRASS at a specific lab with
    specific data, but it contains a lot of information that
    should be helpful when getting started with GRASS.

    beginner's tutorial available in a variety of formats

    I haven't looked at these, but it was mentioned on the user's
    list last month.
