Jason,
I don't know too much about the METEOSAT image, however I have done similar
things with CoastWatch images and precipitation data (in HRAP coordinate
system) in GRASS.
I think that your problem is to pick "the" coordinate system you like.  It can
be lat/long, lcc, or even pure XY (as long as you don't need to overlay with
other maps).
Send me an e-mail for the format of the METEOSAT and its coordinate reference
and I may be able to help.

P.S.  I am in the process to compile GRASS on Solaris 2.5.1.  The "core" part
has been done and I am looking into other incoming programs.  If anyone has
any problem with a particular command, please let me know and I will spend
some time to debug it.
