details about volumetric interpolation of precipitation data using 
s.vol.rst can be found in this paper:

Hofierka J., Parajka J., Mitasova H., Mitas L., (2002): Multivariate 
Interpolation of Precipitation Using Regularized Spline with Tension. 
Transactions in GIS  6, pp. 135-150.

Examples and short explanation is also in GRASS book written by Markus
