try this:
grdinfo elevation.bin=1

note that the output from r.out.bin is not a NetCDF file. GMT can still use 
the file, but you have to tell GMT what kind of file: i.e. is it integer or 
floating point data:

grid.bin=1   for floating point grids
grid.bin=2   for integer grids
