Etienne,

 

If you're looking at vines using remote sensing, I'd suggest obtaining satellite data (eg. Landsat 7, which can be obtained free of cost). Create RGB composites using GRASS. Use for instance the near or mid- infrared (Landsat bands 4 & 5). These should allow you to study vegetation types and changes. Also take a look at the Tasseled Cap Transformation in GRASS. Or create an NDVI image.
