what are you aiming at? a volume (the the direction is right) or a
common 2D elevation map with height values as pixel values?

Maybe take a look at
https://grasswiki.osgeo.org/wiki/Contour_lines_to_DEM

which refers to contour lines but some of the methods explained there
are similar for point data.
