[Lexicon] Season of Docs status

I've created a git pull request for to have OSGeo added to
https://github.com/google/season-of-docs/blob/main/2021-participants/interested-organizations.md
(and
it has been accepted already).

I noticed that we need to have a Season of Docs specific page for our
project, so I've created https://wiki.osgeo.org/wiki/Season_Of_Docs_2021 .

I've also touched up the image sizes at
https://wiki.osgeo.org/wiki/Glossary-Project#Challenges

Hope that's everything?

Back in 2019, I captured all the answers I'd previously provided. Sorry, I
should have shared that with you earlier. The intent at the time was to
help fill in future year applications.
