[Live-demo] Where should JAVA_HOME be set (if overriding default=openjdk 1.7)?

Natty's openjdk is version 6. I've been told by someone (Jody Garnett?) 
that OSGeo applications will likely have problems with openjdk 6, but 
that openjdk 7 is looking more promising.
Hence I think if we are to include openjdk, then we should be installing 
version 7.
