Hello Mauricio,

to set the locale permanently go to the file parameters.yaml and set 
mapbender.automatic_locale: false

     fallback_locale:   en
     locale:            es
     # uncomment this if you don't want the language to automatically 
adapt to the browser language
     mapbender.automatic_locale: false

This will set the locale to spanish and does not take the language that 
is set in the browser (default behaviour)
