With coordinate system overrides, you make it appear as if the data was 
in another projection.
Suppose your raster data reports that it is in XY-M, but it is really in 
UTM32, you can
"trick" MapGuide into beliving that the data is in UTM32.

Reprojection is the transformation from one projection to another.
Suppose you have data in LL84 and data in UTM32 that you want
to display both datasets in the same map, you need to map the coordinate
values to be in the same range.

Coordinate System Overrides do not change actual coordinate values,
reprojection does. Raster reprojection is a bit tricky because there are
no actual values, only images, so instead you map control points, and 
stretch the image.
