In cache within globals in yaml, the whole yaml could look like:

globals:
  cache:
    base_dir: '/tmp/mapproxy/cache_data'

services:
  demo:

layers:
  - name: osm
    sources: [osm_cache]

caches:
  osm_cache:
    grids: [GLOBAL_WEBMERCATOR]
    sources: [osm_source]

  osm_source:
    type: tile
    grid: GLOBAL_WEBMERCATOR
    url: http://tile.openstreetmap.org/%(z)s/%(x)s/%(y)s.png
