Doesn't look like that got documented although it was talked about as
part of one of
the various GML3L0 bugs. There's a metadata value called
"gml_geometries" that allows
you to specify the geometry types used for the layer, you can set more
than and the GML encoder
will choose the right one based on the shape properties and its type.
You can also set gml_geometries "none" and that will supress output of
the coordinates.

How do you control geometry? I barely remember talking about
controlling
geometries but I don't see anything in the docs at
http://mapserver.gis.umn.edu/docs/howto/wfs_server/#layer-object
