Geoserver has only recently added support for serving raster imagery,
and it is still in beta.

Mapserver is very mature and very feature rich. I think most of the
arguments against CGI are overblown and would not hesitate to
recommend CGI to anyone. If you are opposed to CGI, MapServer has
various scripting flavors.

Bart's comments regarding WFS-T and database performance in general
are quite relevant, especially if you are using Oracle. PostGIS
performance with MapServ however is very good.

Just one guy's view...
