And in researching this, I found that our wonderful OpenLayers
contributor Eric Lemoine already sent a patch to fix this 5 months ago:

I've followed up to this asking what the current status is.

In the meantime, I have no plans to make our GML layer support the
particularly broken flavor of GML polygons that PostGIS spits out.
