Comment:

 Ok, so it turns out that while GeoServer accepts
 {{{<wfs:Value></wfs:Value>}}} as a null for Geometry, the correct way to
 do an update with a property value of null is to omit the
 {{{<wfs:Value>}}} element altogether.
