HI beppe,

You have a simple example to add new features with Geoserver. If can
find it following:

My Geoserver -> Demo -> WFS-T demo

this should open a link to geoserver/www/wfs-t.html

To edit attributes you can have a look the last example in chapter 4
of OpenGeo's OpenLayers Workshop:
