Hello,

If it's only the api you mean by documentation, have a look on
http://trac.openlayers.org/wiki/NaturalDocs for building your documentation.
For the examples code, it's in the openlayers release.
For mirroring website, winhttrack or httrack (depend of your OS), in command
line, wget recursive.
