[Live-demo] What version of applications should we be installing on OSGeo-Live 5.5?

I'll try, its a bit time critical, because between the 2nd day after
Christmas and New Year I'm totally offline ;)
I'm going to start with geoserver 2.1.3 and if finished I'll go over
to udig 1.3.1, but in this case we have to update the docs
(screenshots with palette tools ;)) and go through the walkthrough as
well.

here is the plan:
* update scripts for geoserver 2.1.3 and test it
* update scripts for udig 1.3.1 and check that everything is fine (I
guess we ship it with the bundled JRE so we do not have care about the
OpenJDK discussion right now
* if everything went well, update the docs

Would be great to get support for several steps, reviews etc. Its
warmly welcome!!!

@Cameron: I'm ok with your suggestion to be a point of contact for
geoserver in the the osgeo live project. Who was it yet?
