Thanks Ede for the feedback.

Indeed including docker images in the VM will increase the size 
significantly.
Unfortunately I do not see a viable solution to maintain the VM 
script-based installers at this point.
Almost all OSGeo projects are currently offering/maintaining docker 
images, so my proposal is to include this effort in the VM, without the 
extra burden to maintain shell scripts.

The goal would be:
1. Keep the iso distribution with core debian packages.
2. Distribute a VM version including docker images. We would need to 
determine if we want to download all docker images (for offline usage) 
or if we prefer to point to online docker images at runtime.
3. Adapt the documentation to use docker / docker compose style of 
running the VM applications.
