I vaguely recall we discussing both Plausible.io and Matomo. Can’t recall the opinions.
I do like that Plausible uses postgres as a backend. I remember that was one thing I didn’t like about Matomo that it uses MySQL.
I’ve added to list https://trac.osgeo.org/osgeo/ticket/2830
At anyrate even if PostGIS doesn’t need it, I plan to install one of them for OSGeo project use.

Should you at one point feel like you need analytics, I have good experiences with Plausible.io, which are branding themselves as a privacy-conscious, GDPR-compliant web analytics solution.

Is the site using Apache? If so analytics can be done on the log files

Completely stop. I don't even know into what account those stats are aggregating, assuming they even are at all. Strip it out. If we're feeling spunky some day we can figure out a different analytics solution.
