Paul.. it´s not a direct answer for your questions but...
could help to clarify somethings.
I know that terralib can store and manipulate raster data
in normal database (even mdb´s) and spatial database too.

We could take a look to how terralib team implement raster
objetcs inside RDBMS, and see what could be used in
PostGIS.
The basic class is "TeRaster"

These book explain more about that, but actualy just in
portuguese, i heard that some one was translating to
english, but i can´t remember who. But some exemples are
easy to understand (because all code is in English).
