You can achieve this from the command line as:
pgsql2shp.exe [insert appropriate parameters here]

pgsql2shp.exe, and the *nix counterpart pgsql2shp, come with the
standard postgis distro, if I am not mistaken.

Sorry if it's a dumb question, but I wonder why there is no
"AsESRIShapefileGeometry(geometry_column)" and
"WKTFromESRIShapefile(esri_shapefile_geometry)" that could work like
AsText() or GeometryFromText() functions.

Is it difficult to do ?

I think it could be very useful.
