[postgis-users] Geography and geom objects

Are there publications detailing the use of geography and geom objects?
Which one can be used by which applications?

For instance, we used geom objects, that can be read in by applications
such as QGIS, ArcGIS and MapInfo.

How about geography objects?  Which applications can read in geography
objects from PostGIS?

Can anyone shed light on this?
