Sure that stability of 1.0.x branch will improve.
But my impression is that unstable branch gets even more fixes and
polishing. Some fixes are not backported to 1.0 because they contain
necessary changes in GUI or the backport isn't trivial, e.g. recent
grass fixes. I would welcome a poll on qgis website asking what
version users prefer...
