Amusingly, during the hackfest, I proposed a similar thing (having the
same problem):

GRASS comes with a large number of predefined tables which could be
recycled. They could be used as predefined tables to populate the colormap
structure (so that the user can do further fine tuning if desired).

Three families of color tables are there
- static (fixed values as for vegetation indices, celsius etc)
- dynamic (given in percent like green-yellow-red, differences etc).
- mixture of both.

I would welcome to be able to quickly assign a predefined color table
after seeing (commonly) an all grey raster map when the used GeoTIFF
(or whatever) file does not contain a color table.
