Just use the UbunutGIS unstable PPA, despite it's name.
You'll use stock Postgres/PgAdmin from Ubuntu + whatever the newest
Postgis is 2.1.3 I think.

It's not necessarily more or less stable than other recent combos just
quite easy to install.
