In Paolos case, the symbol path is really empty (no file path set).
Even if you select a default symbol there should be something
visible in the file path line input widget. So either the user never
selected an SVG symbol (which would explain it), or there is a
migration issue from an older QGIS version.<br>

I can confirm that the default fill of default symbols is white on a
64bit Ubuntu Linux and recent master. Hopefully, this can be fixed.
It is quite annoying - but not a major blocker in my opinion - as
the user can still easily fix it by setting the color back to black.<br>

It seems like there is no valid file path selected pointing
to your SVG file. Below the symbol preview panel there is a
line (just above the "effeti disegno" checkbox) that
normally shows the file path pointing towards the selected
SVG file. In your case it seems to be empty - but it
